Overview

As our Junior Sommelier at the 2*Michelin restaurant ION Hearboure, you will be to make a positive impact to the guest weaving the most excellent wine list matched up to the needs of the diner. You will collaborate with other F&B team members to responsibility coordinate the match between wines and dishes and enhance the restaurant’s reputation.

We are looking for a talented candidate with a formal wine education from an accredited program complemented by passion. Your level of knowledge regarding the types of wines, origin and production year will go a long way towards entertaining and making memorable our customers.

Duties & Responsibilities:

Help in the development and management of the wine list for the restaurant business.

Illustrates the working relationship with the senior sommeliers to identify wines from different growing areas and order them.
Responsible for checking of wines, monitoring of stock and rotation of wine stock.
Makes certain that tables are set rightly with the right glassware for the appropriate types of wine.
Uses proper etiquette to first meet and introduce the guests, explains how the tasting works and gives suggestions on wines to order.

Shares information about wines, uncorks and serves wines to the guests in a professional manner showing professional wine service and presentation skills.
In the wine list, participates in wine conversations and provides wine information.
Responsible for working in conjunction with their counterparts on the culinary side of the kitchen to ensure that there is a proper wine pairing list.

Offers professional advice on what wines go well with the dishes served in a restaurant.
Culturally ever eager to learn more about wines, winemaking and regions worldwide.
They respond to any questions or problems that the guests may have in regard to wines and rectify them.
Comply with efficiency and quality standards thus keeping the reputation of the restaurant high.

Works closely with the front and back of the house team to ensure a well-coordinated teamwork structure.
Aids in the usual stock-take and inventory taking of the contents of the wine cellar.
Efficient ways of decreasing waste in order to eliminate avoidable costs, while at the same time providing high levels of service.


• Enhances guest experience and the environment of the restaurant.

• Minimizes breakages and losses of the restaurant equipments and immediately informs the Restaurant Manager or any other authority on the same.

• Maintains all dining safety and sanitation policies and food handling practices to provide a clean and safe dining experience.

• Lastly, the employee is required to undertake other duties assigned by the line manager from time to time..

• He/she must possess wine knowledge certification from any of the recognized wine education programmers like Court of Master Sommeliers or WSET.

Qualifications & Experience:

• Minimum one years’ experience in the similar position in the fine dining or Michelin star restaurant.

.It is also important to be passionate about wine and to know wine varietals and wine producing regions and vintages.

• Knowledgeable in the rationale of decantation and presentation of wines.

• Customer service abilities with the capacity to understand guests’ requirements and respond promptly.

• Strong interpersonal and communication skills with good English language proficiency.

• Desire to acquire new knowledge and follow industry trends.

• Ability to work with other people and be a team player in action.

• Have to work during the shifts, including the weekends and public holidays as well.
